The Irish Section invites CIBD members to a comprehensive tour of the Church of Oak Distillery, a new multi-grain Irish whiskey distillery located in County Kildare. This visit offers a unique opportunity to gain a deeper understanding of the technical aspects of whiskey production, including an overview of the equipment used and production processes.
The tour will be followed by a technical talk on the history and origins of Guinness yeast - 'A talk on The Brewing Yeast of Ireland' by Dr. Daniel Kerruish.
Advances in molecular biology have enabled brewers to understand the origins of both top-fermenting yeast (Saccharomyces cerevisiae) and bottom-fermenting yeast (Saccharomyces pastorianus). In this talk, Dr Kerruish will discuss the origins of brewing yeast and how Irish researchers have helped develop an understanding of brewing yeast lineages.

- Dr Daniel Kerruish
As a member of BBT consultancy group, academic positions at TU Dublin, the University of Nottingham and as a CIBD Diploma tutor, Daniel has extensive knowledge in brewing microbiology. Daniel’s previous role as Diageo’s group Microbiologist, saw Daniel undertake a number of yeast related projects resulting in publications on the origins of the Guinness yeast and other historical Irish brewing yeast.
Daniel’s expertise in yeast, fermentation, and microbiology is complemented by his knowledge of CIP, non-alcoholic production and NPD.
